And Beef Birria ("Birria de Res”) has also become popular of late, especially in California, and we just adore this hearty, fragrant, chile-heavy stew-like braise made with three different chile-peppers and farm-fresh Belgian beef carbonnades from Ferme Tilkin in Lantin close to Liège.
